Cut the cauliflower into florets. Bring the stock in a soup pan to the boil. Add the cauliflower and cook over low heat for 5 minutes until al dente.

Take the pan off the heat and puree with the hand blender until smooth.

Add the whipped cream and nutmeg and continue to heat on low heat.

In the meantime, finely chop the chives. Put the soup in plates and divide the salmon and chives.
