Boil the cubes of celeriac and potato in salt for about 20 minutes. Drain and drain well.

Scoop back into the pan and add the butter and crème fraîche. Stir to a coarse puree and season with pepper.

Chop the herbs and spring onions coarsely and scoop 5 minutes before serving through the hot mash.

Serve the stew with the stew. Delicious with mustard and silver onions.
