                                Cook the potatoes for 10-12 minutes. Drain, rinse with cold water and drain well. Fry the potatoes for 4-5 minutes in a dash of olive oil.

                                Mix the ingredients for the dressing. Divide the arugula over a dish or plates. Divide the cheese cubes and the potatoes.

                                Roast the pine nuts in a dry, hot frying pan and sprinkle over the arugula. Sprinkle with the dressing.
