Directions

  1. Cook the potatoes for 10-12 minutes. Drain, rinse with cold water and drain well. Fry the potatoes for 4-5 minutes in a dash of olive oil.
  2. Mix the ingredients for the dressing. Divide the arugula over a dish or plates. Divide the cheese cubes and the potatoes.
  3. Roast the pine nuts in a dry, hot frying pan and sprinkle over the arugula. Sprinkle with the dressing.
  4. Garnish the salad with egg, tomato and chives. Grind pepper and sprinkle the potatoes with rucola salad and old cheese with a little salt.
