Directions

  1. Boil the rice with salt and drain. Beat the eggs with salt and pepper.
  2. Heat 2 tablespoons of oil, pour in the egg mixture and fry an omelette. Cut these into strips.
  3. Heat the rest of the oil and fry the spring onions. Put the ginger root, the curry powder, the peas and the cooked rice through and stir-fry 3-4 minutes.
  4. Spoon the shrimp just before serving. Divide the omelet strips over it and sprinkle the dish with coriander.
