Pasta with ratatouille and tofu
Fresh pasta with eggplant, pepper, black olives, tofu and tomato cubes.

Clean the eggplant and pepper and cut into cubes. Peel the garlic and chop.

Cook the pasta according to the instructions on the package. Heat in a frying pan of oil. Fry the garlic and paprika for about 2 minutes.

Add the eggplant and cook for another 2 minutes. Halve the olives. Add the tomato cubes and olives and heat the sauce for about 5 minutes.

Heat in a frying pan oil and fry the tofu in approx. 4 minutes until tender and brown. Spoon the tofu through the sauce, season with salt and pepper. Serve the pasta with sauce.
