Celeriac stew with savory smoked sausage

Peel the potatoes and cut them into pieces.

Peel the celeriac and cut into slices of more than half an inch.

Cut or cut 24 rounds out of the slices (other shapes can of course also).

Cut the rest coarsely.

Put the coarsely cut celeriac with the potatoes in a large pan and add water until everything is just below.

Add the lemon juice and the bay leaves.
-
Bring to the boil and simmer for 20 minutes.
-
Heat the smoked sausage according to directions on the packaging.

Drain the celeriac and potatoes, remove the laurel.
-
Stamp with a puree rammer to the desired structure.
-
Heat the butter and milk, add it to the puree.
-
Season the puree with salt and white pepper.
-
In a different pan, bring some water to the boil with plenty of salt.

Boil the celeriac rounds for about 5 minutes until they are al dente.
-
Drain and keep warm under aluminum foil.
-
Cut the sausage into 24 slices.
-
Serve the puree on a plate or in a bowl, with on and around the celeriac circles and sausage.

Garnish with sprigs of fresh celery.
