Directions

  1. Mix the shallot, celery, gherkin, capers and lemon zest with 2 tablespoons of salt. Rub the salt in well and leave to drain for about 10 minutes in a sieve.
  2. Wash off the salt and let it drain again.
  3. In the meantime, heat the vinegar and dissolve the honey. Mix the parsley with the vegetable mixture and scoop the mixture into a jar.
  4. Pour the honey vinegar over it and allow to cool.
