Soak the smokers for ½ hour in plenty of water. Meanwhile, light the barbecue. Slide the charcoal when it is red-hot to 1 side.

Mix the cane sugar, the salt, the tabasco and paprika powder together. Rub the meat around with it and put the meat in the dish.

Place the dish with meat on the part of the barbecue where there is no charcoal underneath. Sprinkle a handful of smokers on the coals.

Put the lid on and let it cook and smoke for 3 ½ hours. Turn the meat every 30 min. Fill the charcoal every hour. Then sprinkle some smokers.

Meanwhile, put the caster sugar, tabasco, ketchup and cider vinegar in a saucepan and bring to a boil. Let it boil gently for 5 minutes.

Pour the sauce into an aluminum dish and put next to the meat so that it can further reduce and get a smoky flavor. Remove the sauce after 1 hour.

Remove the meat from the heat and let cool for 30 minutes. Pull the meat apart into small pieces. Throw away the fat that is between the meat.

Meanwhile, put the barbecue sauce back into the saucepan and stir in the baking liquid from the dish. Bring the sauce back to the boil and mix through the meat.
