Oven chips of celeriac with caper mayonnaise

Preheat the oven to 200ºC.

Peel the celeriac. First cut the tuber into thick slices and then into French fries.

Spoon over a griddle covered with parchment paper with a dash of olive oil and sprinkle with coarse sea salt. Roast high in the oven for about 20 minutes.

Meanwhile, mix the mayonnaise with the sour cream and capers. Season with lemon juice and pepper and serve with the fries.
