Sprinkle large sheet of baking paper.

Bring the pan to the boil with the bottom of the water.

Break the chocolate over the saucepan into pieces.

Place the saucepan over steam from just boiling water and let chocolate melt with stirring.

Remove the chocolate from the heat and hold the pan at an angle.
