Cheddarka sauce
A nice English recipe. The vegetarian side dish contains the following ingredients: butter, flour, semi-skimmed milk, Cheddar (Tophat 48 (cheese), grated) and nutmeg.

Heat the butter in a saucepan and add the flour. Stir until smooth, and cook for 2 minutes on low heat (roux).

Add the milk and bring the sauce to the boil while stirring. Cook gently for 3 minutes and then add the cheese. Let the cheese melt with stirring. Season with nutmeg, pepper and salt. Tasty over vegetables such as cauliflower, broccoli or chicory.
