Directions

  1. Melt the butter in a saucepan over medium heat. Add the flour. Heat this roux for 3 minutes while stirring.
  2. Add the stock and stir until it is absorbed.
  3. Add the cheese and the mustard and stir into a coherent ragout.
  4. Cover the cake tin with parchment paper and spoon in the ragout. Allow to cool for 1 hour in the refrigerator.
  5. Preheat the oven to 200 ° C.
  6. Halve the roll of puff pastry in the length. Cut each part into 5 slices so that you have 10 slices of 13x8 cm.
  7. Remove the cheese ragout from the cake tin and divide into 5 slices.
  8. Divide 5 puff pastry slices over a baking tray covered with parchment paper.
  9. Place each ragout slice in the center of the puff pastry. Coat the edges of the puff pastry with water.
  10. Stretch the rest of the puff pastry slices slightly and cover the cheese rolls. Press the edges of the puff pastry well with a fork.
  11. Beat the egg and brush the top of the cheese rolls with it.
  12. Cut the top of each cheese roll in 3 places, but do not cut through. Divide the cheese over it.
  13. Bake the cheese rolls in the middle of the oven for 15 minutes until golden brown and done.
