Cheese omelette with zucchini
A tasty Dutch recipe. The vegetarian main course contains the following ingredients: zucchini, red onion (peeled), (spray) tomatoes, extra virgin olive oil with basil, eggs, grated cheese, butter and freshly ground black pepper.

Cut courgette into slanting slices, cut red onion into wedges and tomatoes into thick slices.

Preheat the grill pan (or oven grill).

Zucchini, onion and tomato carefully shake with oil.

Vegetables in grill pan (in portions) cooked toasting.

Dissolve eggs with 2-3 tbsp water, 100 g grated cheese and pepper to taste.

Melt butter in large frying pan.

Add egg mixture and allow to solidify.

Using the spatula, gently spread the frozen egg from the edge to the center of the pan and allow the unboiled egg to flow over the bottom of the pan.

Continue until all egg is almost solidified.

Grilled vegetables distribute half of the omelette.

Sprinkle the rest of the cheese over it and fold the omelette in half.

Serve with wholemeal bread..
