Soy cashew chicken skewers with green stir-fry and rice

Prepare the rice according to the instructions on the package.

Heat the oil in a frying pan and stir fry the broccoli florets for 10 min. On medium heat.

Grate the ginger. Add the snow peas and ginger and cook for another 5 minutes. Turn off the heat and add the soy sauce.

Meanwhile, put the cashew nuts in the food processor and grind almost fine. Put in a deep plate.

Put the flour in a plate. Beat the egg with the soy sauce in another deep plate.

Pour the chicken filet chops successively through the flour, the egg-soy mixture and the walnuts and baste the skewers.

Heat the oil in a pan with non-stick coating and fry the chicken skewers over medium heat in 10 min. Around golden brown and done. Keep an eye on it.
