Soy cashew chicken skewers with green stir-fry and rice

Directions

  1. Prepare the rice according to the instructions on the package.
  2. Heat the oil in a frying pan and stir fry the broccoli florets for 10 min. On medium heat.
  3. Grate the ginger. Add the snow peas and ginger and cook for another 5 minutes. Turn off the heat and add the soy sauce.
  4. Meanwhile, put the cashew nuts in the food processor and grind almost fine. Put in a deep plate.
  5. Put the flour in a plate. Beat the egg with the soy sauce in another deep plate.
  6. Pour the chicken filet chops successively through the flour, the egg-soy mixture and the walnuts and baste the skewers.
  7. Heat the oil in a pan with non-stick coating and fry the chicken skewers over medium heat in 10 min. Around golden brown and done. Keep an eye on it.
  8. Divide the rice over the plates, put the vegetables in the middle and put the chicken skewers on it.
