Cheese soup with sherry and coriander
A tasty recipe. The starter contains the following ingredients: poultry, Zaanlander cheese lightly spicy, butter, onion (chopped), flour, dry sherry, chicken broth (from tablet), lemon juice, crispy fried onions (bowl), fresh coriander ((a 15 g) and finely chopped ).
Cut off chunks and grate cheese (in food processor).
Heat butter in a soup pot and onion for 3 minutes.
Sprinkle flour over onion and gently fry for 1 min.
Add Sherry and keep stirring until all sherry is absorbed by the flour.
Allow to pour chicken stock in pan and stir with stirring until smooth, lightly bound soup is formed.
Melt cheese in soup.
Add lemon juice if soup does not bind homogeneously.
Season the soup with pepper and create in four bowls.
Garnish with fried onions and coriander..
