Directions

  1. Heat the olive oil and fry the mushrooms on high setting in 1 minute brown.
  2. Add the garlic and thyme and cook for another 1/2 minute. Scoop into a bowl and let cool.
  3. Stir in the ricotta and season with salt and pepper.
  4. Place 8 slices of ham on a cutting board and fold them in half lengthwise. Brush with the ricotta and roll the ham firmly.
  5. Place the rolls on a nice leaf of radicchio.
