Heat the olive oil and fry the mushrooms on high setting in 1 minute brown.

Add the garlic and thyme and cook for another 1/2 minute. Scoop into a bowl and let cool.

Stir in the ricotta and season with salt and pepper.

Place 8 slices of ham on a cutting board and fold them in half lengthwise. Brush with the ricotta and roll the ham firmly.

Place the rolls on a nice leaf of radicchio.
