Cheeseburger with vegetable sorrel and yogurtmayo
Cheeseburger with cheddar cheese on a Twente ball. With crispy vegetable sorrel and yoghurt mousse.

Preheat the oven to 200 ºC.

Divide the vegetable fries over a baking sheet covered with parchment paper and drizzle with the oil, pepper and salt.

Bake in the middle of the oven for 30-35 minutes until done. Spoon halfway.

Meanwhile, heat the grill pan without oil or butter and grill the burgers for 14-18 minutes. Turn halfway. Put a slice of cheddar on each burger for the last minute.

After 20 minutes, remove the baking sheet from the oven and place the Twente bread rolls next to the vegetable fries and bake for 10 minutes in the middle of the oven.

Meanwhile, wash the tomatoes and cut into slices. Mix the yogurt with the mayonnaise.

Cut the bread rolls in half. Cover each bun with some lettuce, 2 slices of tomato, 1 hamburger and 1 tbsp of ketchup.

Divide the burgers over the plates and serve the vegetable fries with the yoghurt mousse.
