Heat 1 tablespoon of oil and fruit in the shallot and garlic. Mix with the bread cubes.

Divide the marmite over the bread and scoop the cheese, 2 tablespoons of chives and mustard through it. Add the eggs and some breadcrumbs and knead until firm. Form 4 balls and roll them through some breadcrumbs.

Heat the rest of the oil with the butter and fry the meatballs in a medium-high setting for 12-15 minutes until golden brown and done. Sprinkle with the rest of the chives.
