Fennel salad with watercress
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: fennel tubers, watercress (or lamb's lettuce), lemon, liquid honey, extra virgin olive oil and freshly ground black pepper.

Clean the fennel tubers, cut off the underside and the stalks and halve the tubers.

Scrape the pieces of fennel (in the food processor) into thin strips or cut thin slices of it with a sharp chef's knife.

Remove the coarse twigs from the watercress or pick the carrots from the lamb's lettuce.

In a salad bowl, beat the lemon juice with the honey and olive oil to a dressing.

Season with salt and pepper.

Spoon the fennel and watercress or lamb's lettuce loosely through the dressing.

Delicious with fried veal..
