Directions

  1. Beat the whipped cream with the sugar. Splash this through the mascarpone.
  2. Purée 1/3 of the cherries and scoop this puree lightly through the mascarpone mixture.
  3. Divide half of the cookie crumbs over the glasses. Spoon a layer of cherries, half of the cherry-mascarpone mixture, the rest of the biscuits, the rest of the cherry-mascarpone mixture and the rest of the cherries. Put the glasses in the fridge for 30 minutes.
  4. Roast the almonds in a dry hot frying pan and sprinkle over the trifle just before serving.
