Directions

  1. Cut the chicken breasts horizontally and flatten them between the cling film. Remove the foil and sprinkle with salt and pepper.
  2. Heat the oven grill. Take the chicken through the flour. Heat the butter and fry the chicken chops in about 3 minutes per side until golden brown. Place them side by side in a low oven dish.
  3. Add the olive oil to the shortening and fry the onion and garlic.
  4. Add the tomato cubes with juice and thyme. Season with salt and pepper. Heat the sauce and reduce slightly.
  5. Mix the eggs with the Parmesan cheese and the oregano. Spread this egg mixture over the schnitzels and grate them (not too close) under the hot oven grill.
  6. Serve the chicken schnitzels with the tomato sauce. Serve with tagliatelle or spaghetti.
