Directions

  1. Sprinkle the chicken with the ginger, turmeric, salt and pepper.
  2. Heat the oil in a casserole. Smother the chicken with the lid on the pan for 5 minutes.
  3. Add the garlic, parsley and stock and let it simmer for 20 minutes.
  4. Cut the roots into thick strips. Add carrots and broad beans, simmer for 15 minutes and add the coriander, lemon juice and olives for the last 5 minutes.
