Preheat the oven to 180 ° C. Put the chicken fillets in plastic foil and store them thinly and flat with a rolling pin. Remove the thin chicken fillets from the foil.

Spread the chicken on one side with the goat's cheese and spread the spring onions. Then roll up the fillets. Sprinkle with salt and pepper and stick the rolls with a skewer.

Place the rolls in a greased oven dish and bake them in the middle of the oven for 25 minutes.

Fry the red onion in the olive oil and add the mango and chilli sauce. Cook gently for 5 minutes until chutney. Add some coriander if necessary.

Mix the ingredients for the dressing and mix them with the lettuce.

Place a pile of lettuce in the middle of the plate. Cut the chicken roll in half and put it on the lettuce. Spoon some of the sauce over it. Garnish with slices of cucumber.
