Mix the chicken fillet with 2 tablespoons of sherry, half of the cornstarch, the ginger and 1/2 teaspoon of salt.

Blanch the broccoli for 1 minute, add the snow peas and blanch for another minute. Drain the vegetables and rinse cold water.

Heat the wok oil and fry the red pepper, garlic and shallot briefly. Add the chicken cubes and fry them around brown.

Mix the rest of the sherry with the rest of the cornstarch, the soy sauce and sambal and spoon this mixture through the chicken.

Roast the peanuts in a dry, hot frying pan.

Mix the broccoli and snow peas through the chicken and sprinkle with the peanuts.
