Chickpea salad with grilled feta

Directions

  1. Grate the peel of 1 lemon.
  2. Squeeze out the 2 lemons.
  3. Heat 3 tablespoons of oil and fry the garlic with the curry powder.
  4. Scoop the chickpeas through and allow to cool.
  5. Mix the spring onion, 2 tablespoons of lemon juice, salt and pepper.
  6. Preheat the oven grill.
  7. Roast the nuts in a dry, hot frying pan and keep separate.
  8. Place the feta with the to and olives in an oven dish.
  9. Sprinkle with the oregano, lemon juice, salt and pepper.
  10. Drizzle with the rest of the oil and place the dish under the grill for 6-7 minutes until the cheese starts to turn light brown.
  11. Spread the spinach over a dish or plates and spoon the chickpea mixture.
  12. Sprinkle with the nuts and spread the feta with to and olives over it.
