Preheat the oven to 200 ° C. Drain the beans and pat dry with kitchen paper. Spoon on a griddle covered with parchment paper and spread the tomatoes over it.

Halve the aubergines in length, cut into ½ cm slices and mix with the beans.

Sprinkle with the oil and season with the cumin, some pepper and salt. Bake for about 30 minutes in the middle of the oven.

Meanwhile, put the apricots in a bowl and pour boiling water over them. Let stand for 10 minutes. Drain and cut into small pieces.

In the meantime, heat a skillet without oil or butter and toast the almonds for 3 minutes on medium heat until golden brown. Scoop out of the pan onto a plate.

Remove the bean-tomato mixture from the oven and spread over the plates. Garnish with the apricots and almonds.
