Use a sharp knife to cut the skin and the white skin of the oranges.

Cut the segments of flesh from the membranes, so that you can easily pop out the flesh with a knife.

Halve the rest of the orange and press out. Peel the kiwifruit and cut into segments.

Cut the underside of the stalk chicory and cut the chicory in half. Remove the hard core.

Cut the chicory lengthwise into strips and put into a bowl. Scoop the orange and kiwi slices through.

Cut the goat cheese into slices and mix through the salad. Cut the chives into pieces and mix them.

Make a dressing of orange juice, olive and walnut oil, mustard and honey. Season with pepper and salt.

Chop the walnuts coarsely. Sprinkle the dressing over the salad and sprinkle with the walnuts.
