Chicory salad with red grapefruit
A tasty recipe. The vegetarian side dish contains the following ingredients: chicory, red grapefruit, extra virgin olive oil, red wine vinegar, sugar, shallot (chopped), walnuts (60 g) and coarsely chopped).

Cut the bottom of the stalk chicory and remove the hard core.

Loosen the leaves and cut them lengthwise into strips.

Use a sharp knife to cut the skin and the white skin of the grapefruit.

This is easiest if you peel it, like an apple, in a circular motion.

Cut the segments of flesh from the membranes, so that you can easily pop out the flesh with your knife.

Try to collect as much juice as possible when cutting.

Make a dressing of the grapefruit juice, the oil and the vinegar.

Season with the sugar and pepper and salt.

Mix the chicory with the grapefruit and the shallot and pour the dressing over it.

Sprinkle with the walnuts..
