Peel the eggs and cut into small cubes.

Mix the eggs with the mayonnaise, crème fraîche, mustard, lemon juice, chives and ham cubes. Season with salt and pepper.

Remove the leaves of chicory, spread them over a bowl and scoop the egg salad.

Garnish with slices of radish and some extra chives.
