Preheat the oven to 180ºC. Strain the flour and add a pinch of salt.

Beat the eggs and stir in the milk and melted butter. Pour the egg mixture with stirring into portions in the flour until smooth.

Spoon the to, spinach, herbs, mozzarella, Parmesan cheese and pepper to taste.

Spread the batter over the muffin mold and fry the muffins in the middle of the oven for about 25 minutes until golden brown and done.

Test with a skewer if it comes out dry and the spinach muffins are cooked.
