Chicory salad with parsley dressing
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: shallot (finely chopped), white wine vinegar, Dijon mustard, fresh flat parsley ((a 20 g), finely chopped), sunflower oil, chicory and apple (fresh and firm (eg Granny Smith)).
Mix the shallot and the vinegar in a bowl and leave to marinate for 5 minutes.
Add the mustard and the parsley and whisk in the oil.
Season with salt and pepper.
Cut the underside of the chicory stalks.
Remove the hard core and any discolored outer leaves.
Halve the stalks.
Cut the halves lengthwise into thin strips.
Cut the apple in four, remove the core and cut the parts into thin slices.
Mix with the chicory and pour in the dressing.
Season with salt and pepper and spread over four plates..
