Endive with lemon
A tasty recipe. The vegetarian side dish contains the following ingredients: lemon (scrubbed), olive oil, shallots (in rings) and sliced endive.

Grate the yellow skin thinly from the lemon and squeeze out the fruit.

Heat the oil in a large frying pan and fry the shallots with the grated lemon zest for 2 minutes. Spoon the endive part by the shallots part by side and let the vegetables shrink in a high heat. Add salt and lemon juice to taste and simmer for about 3 minutes. Delicious with Mediterranean spiced meat or oriental spiced bacon steaks.
