Chilled tomato soup with basil
A tasty recipe. The vegetarian starter contains the following ingredients: tomatoes (or beef tomatoes), basil, dry sherry, spice broth (from bouillon powder) and tabasco.

Cut the tomatoes into pieces. Pick 4 beautiful basil leaves from the twigs and keep them for garnishing. Puree the pieces of tomato with the rest of the basil in the blender or in a small, high bowl with the hand blender. Rub the puree over a bowl through a sieve.

Stir in the sherry and so much stock that the soup is still lightly bound. Season with a few drops of tabasco and let the soup in the refrigerator in about 2 hours through and cold.

Spoon the soup into four small straight glasses and garnish with a leaf of basil.
