Heat the oil and fry the cooked ham on medium to crispy. Take them out of the pan and keep separate.

Fry the onion and lemongrass a few minutes at a low setting.

Add the lime zest and juice and coconut milk. Let it boil for a moment.

Meanwhile, cook the Chinese according to the directions on the package and let it drain well.

Spoon the noodles and ham into the sauce and serve immediately. Sprinkle with 20 grams of coarsely chopped unsalted peanuts and garnish with some strips of lime peel.
