Tortillas with shrimps
Mexican tortillas with marinated shrimps and a salsa of mango, coriander, onion and lime juice

Cut the stalk of the red pepper. Halve the pepper in width. Cut the half fine, with (spicy) or without (less spicy) the seeds.

Slice the peppers and garlic.

Put the chopped pepper, pepper, garlic, oil and possibly salt in a tall cup. Puree with the hand blender.

Pour the marinade over the shrimp and leave to marinate in the refrigerator for 1 hour.

Peel the mango and cut the flesh into cubes. Squeeze out the lime.

Cut the onion into thin rings. Keep some coriander for garnishing and cut the rest fine. Mix the chopped coriander with the mango, onion and lime juice.

Cut the rest of the pepper into thin rings and add.

Light the barbecue.

Heat the tortillas 30 sec. on the barbecue. Turn halfway.

Thread the shrimps on the skewers. Grill them in 4 minutes until done. Turn halfway.

Sprinkle the mango salsa with the retained coriander. Serve the prawns with the salsa and tortillas. Bon appétit! .
