Chinese tomato soup
Chinese tomato soup with spring onions, chestnut mushrooms, stir-fries and prawn crackers.

Clean the mushrooms with kitchen paper and cut into slices. Cut the spring onion into rings.

Heat the oil in a soup pot and fry the stir-fry strips for 5 minutes. Add the soup base, ginger powder, mushrooms and ¾ of the spring onions.

Bring to a boil over medium heat and simmer for 5 minutes. Season with sweet soy sauce, pepper and salt.

Spoon the soup into bowls and garnish with the rest of the spring onions. Serve with the cracker.
