Beat the eggs and mix in the sugar, the flour, the cocoa powder and a pinch of salt.

Add the milk into a smooth batter while stirring. Let this rest for 15 minutes.

Meanwhile, mix in the demi crème fraîche or Greek yogurt, the cinnamon powder, the clove powder and the grated orange peel.

Bake 8 thin pancakes in a little butter. Fold them in four and serve with the spice cream.
