Directions

  1. Cut a piece of skin from the lemon and squeeze out the fruit. Peel the pears and let the stalks sit on them. With the apple drill, stick out the bell housing at the bottom. Drizzle the inside and outside of the pears with the lemon juice.
  2. Bring the white wine with the sugar and lemon zest to the boil. Put the pears in it. Hold the liquid against the boil and poach the pears for about 5 minutes. Turn them regularly.
  3. Let the pears cool down and put them briefly in the freezer so that they become firm. Let the ice slightly soften. Mix the spices through the ice and put back in the freezer.
  4. Mix the almond paste with the egg yolk and fill the pears with it. Melt the chocolate au bain-marie or 2-3 minutes at 800 Watt in the microwave. Mix in the rum and butter.
  5. Roast the almonds in a dry, hot frying pan until golden brown. Brush the pears with the chocolate and sprinkle with the almonds.
  6. Put the pears in the refrigerator to let the chocolate harden. Serve the pears with a scoop of spices ice cream.
