Directions

  1. Clean the lemon. Grate the yellow skin and squeeze out the fruit. Halve the carrots in the length.
  2. Put the lemon juice, carrots, butter, ginger syrup, water, pepper and salt in a pan with a thick bottom.
  3. Bring to the boil and simmer for 13 minutes with the lid on the pan.
  4. Heat the butter in a frying pan and fry the pork chops in 8 min. Until golden brown and done. Turn halfway. Season with pepper and salt.
  5. In the meantime, heat the mashed potatoes in the microwave according to the instructions on the package.
  6. Ris the leaves of the sprigs of thyme and mix through the apricot jam. Season with pepper.
  7. Sprinkle the carrots with the lemon zest and serve with the pork chops, mashed potatoes and confiture.
