Heat the oil in a frying pan and fry the leek for 8 minutes on low heat. Spoon the leeks on a cutting board, let cool and cut finer.

Preheat the oven to 190 ° C. Put the minced meat in a bowl.

Mix half of the mustard, barbecue sauce, leeks, onions, eggs, panko, pepper and salt.

Grease the cake mold. Divide the minced meat over the mold and press. Bake for about 35 minutes in the middle of the oven until golden brown and done.

Remove from the oven and pour on a baking tray covered with parchment paper. Brush the top and sides with the rest of the barbecue sauce.

Bake for about 10 minutes in the middle of the oven.

In the meantime, heat the tomato frito on low heat and scoop in a bowl.

Spoon the pesto and the rest of the mustard into bowls. Serve with the parsley at the meatloaf.
