Roast the lemon, grate the yellow skin and squeeze it out. Sift the flour into a bowl and add the lemon zest and sugar.

Cut the butter into cubes. Knead the butter through the flour mixture until a smooth dough is created.

Wrap the dough in cling film and let it rest in the refrigerator until use.

Preheat the oven to 175 ° C.
