Classic Tiramisu
Classic Italian dessert, tiramisu with mascarpone, marsala, coffee and long fingers.

Split the eggs. Beat with a whisk in a bowl the egg yolks with the sugar into an airy cream. Stir in the mascarpone and mix with the cream.

Beat the whipped cream with the sugar in another bowl stiff with a mixer. Spatula through the mascarpone mixture.

Mix the marsala and (espresso) coffee in a deep plate. If necessary, season with extra sugar.

Dip the long fingers one by one and cover the bottom of the bowl with it.

Divide half of the mascarpone mixture over it. Sprinkle with the cocoa.

Dip the long fingers one by one briefly in the marsala mixture and place on the mascarpone mixture.

Divide the rest of the mascarpone mixture and sprinkle with the cocoa.

Cover the dish with cling film and leave to set in the refrigerator for at least 2 hours.
