Cut the roast pieces. Sprinkle the beef with (freshly ground) salt and pepper.

Heat the butter and oil in a frying pan. Fry the pieces of beef around brown.

Sieve the flour. Add the flour and stir the meat. Let the flower color for a moment.

Now pour the wine along the edge of the pan with the meat (too cold liquid scares the meat and makes it tough).

Spoon the juniper berries and the laurel through the meat-wine mixture. With the lid on the pan, let the oven simmer slowly over 2.5-3 hours on low heat.

Season the stew with (freshly ground) salt and pepper.
