Directions

  1. Heat the oil in a soup pot. Fruit the peeled pressed garlic. Spoon the snow peas and carrot through and stir fry for 2 minutes.
  2. Add the ginger and fry for 1 minute with the oyster mushrooms.
  3. Add lemon juice, stock and oyster sauce. Bring to the boil and cook gently until the vegetables are al dente.
  4. Serve the soup sprinkled with coriander.
