Heat a frying pan without oil or butter and bake the bacon in 5 min. Remove from the pan and drain on kitchen paper. Leave 1 tb grease in the pan.

Grate the Parmesan cheese. Slice the leaves of the parsley and the chives.

Beat the eggs with the milk and stir in the cheese, herbs and pepper.

Heat the shortening of the bacon in the pan. Pour in the egg mixture and stir. Put the lid on the pan and let the omelette cook for 5 minutes on low heat.

Meanwhile, roast the bread in a toaster.

Spread the bread on one side with the mayonnaise. Place 8 slices with a leaf of lettuce.

Cut the tomatoes into slices. Divide the tomato over 4 slices with lettuce and spread the fried bacon over it. Put a slice of bread with lettuce on it.

Cut the omelet into 4 quarters. Put on the lettuce and sprinkle with some cress.

Put the slices of bread with the mayonnaise down on them, insert the satay prawns and cut the bread carefully at an angle.

Divide over 4 plates and garnish with the chips.
