Heat the oil and wokin in the spinach with the garlic and chilli pepper for about 10 seconds. Scoop the shrunken spinach out of the wok, allow to cool and sprinkle with a little salt.

Mix the tomato tapenade with the mayonnaise and spread the toasted sandwiches with it. Spread 2 with the spinach and 2 with slices of smoked chicken fillet.

Stack up and cover with the last buttered sandwiches. Cut through obliquely and possibly stick with a stick.
