Roast the bacon in a dry, hot frying pan until crispy. Remove from the pan and keep separate. Mix the olive oil through the bacon fat.

Halve the lettuce heads in length. Mix the ingredients for the dressing.

Brush the lettuce heads with the olive oil bacon fat mixture and roast them around light brown in a hot frying pan.

Place 1 slice of bacon and 1/2 head of lettuce in the length on the skewers. Sprinkle with the dressing and sprinkle with the cheese.
