Directions

  1. Pour the coconut milk, stock and curry into a soup pan and bring to the boil. Add the chicken and green beans and simmer for about 5 minutes.
  2. Then add the stir-fry vegetables and noodles and cook for another 4 minutes. Season with salt and pepper. Serve the soup with some grated coconut and a lime wedge.
