Press the steaks flat between 2 sheets of cling film to slices of about 1/2 cm.

Mix the ingredients for the chimichurri with 1 teaspoon of salt. Brush the bottom of a dish with 1/4 part of it, lay the meat on it and pour 1/4 part over it again. Let marinate for 20 minutes.

Meanwhile, roast the vegetables that have been covered with olive oil and salt in a grill pan or in the oven.

Dab the steaks slightly dry and toast them for 1-2 minutes per side in a grill pan. Serve the rest of the chimichurri.
