Cod package with charmoula

Grate the ginger root. Cut the red onions. Finely chop the garlic, parsley and coriander. Grate and squeeze the lemon. Cut the pepper into thin strips. Halve the cherryto.

Start with the charmoula: Mix in a bowl the ginger, paprika, saffron, cumin, freshly ground pepper, onion, garlic, parsley, coriander, lemon zest and juice. Pour the olive oil with it while stirring. Let the charmoula stand for 30 minutes so that the flavors can work.

Divide the cod into equal pieces (1 per person). Rub the pieces of cod fillet with some salt and then each with 1 tablespoon of charmoula. Place each piece of cod on a piece of aluminum foil and spread the pepper strips and top. Fold the foil up along the cod and fold it up to close a package.

Put the packages on the barbecue and let the fish be cooked in 10-15 minutes. Put the packages on plates and unfold them. Sprinkle some charmoula over it. Serve the rest of the charmoula.
